Which side of the water line should the water pressure sensor be connected to?  Water in (going into the machine) or water out (leaving the machine)?

It should be connected to the water out side.  The reason is that if you have water pressure on the water out side, you know the input and the whole path through the machine have water.  If you connected only the water in, all you can know is that water is being supplied to the machine, but you don't know if it's leaking inside the machine or not.
