The laser cutter's kerf is simply the width of the cut that results from the laser's beam.  This can be important when designing pieces that need to fit together as the kerf will slightly change the dimensions of the object being cut.  In many cases the kerf can be ignored as it provides the right amount of space to allow pieces to fit together closely when assembled.
